[From the official statement]
Sake is created through the work of three main types of microorganisms: "koji mold," "lactic acid bacteria," and "yeast," along with many other microorganisms. Each of these microorganisms plays its part, passing the baton to one another, and their lives intertwine to give birth to the final product. The role of the brewers is to listen to the voices of these microorganisms, maintain the fermentation environment, and assist them effectively. The sake brewed through this harmonious interaction, where both humans and microorganisms live and work together, becomes a truly authentic sake full of life.
This sake was brewed using rice polished to 60%—about 10% more than our regular "Gonin Musume Junmai" sake. It offers a more refined taste, with a rich and umami-filled flavor characteristic of a traditional Kimoto brewing method. With an alcohol content of 13%, it is lower than that of our regular Junmai sake, allowing for a softer and smoother mouthfeel.
